This meal is one that I’ve made in my house every week for the past few months and its keto / low carb! It is a real husband pleaser!

Ingredients

(About 4 Servings)

  • Italian Sausage Links (pack of 5)
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 Red Onion
  • 3 Tbsp Olive Oil
  • 2 garlic cloves, minced
  • Salt and Pepper to taste
  • Shredded Mozzarella (optional)

Steps

1. Brown Italian Sausage links in skillet. About 5 minutes each side.

2. Chop peppers and onions. Heat olive oil in separate pan. Add peppers and onions. Season with salt and pepper.

3. Once peppers and onions are soft, add minced garlic and stir to keep it from burning until fragrant.

4. Place Italian Sausages in with peppers and onions. Cover and let cook for 5 minutes.

5. Remove Sausage links and place on cutting board. Cut into 1 inch coins and place back into pan.

6. Let cook for 5 for minutes.

7. Remove from heat and serve.

8. *Optional – Sprinkle shredded mozzarella on top!

9. Enjoy!
